I bought the cookbook Small Batch Baking, by Debby Maugans Nakos, shortly after it was released. It's a great cookbook to add to your collection, when you are baking for one or two.

The 352 page book is comprised of more than 250 recipes for all kinds of yummy goodies. Categories include cookies, cake, pie, pudding, cobbler and bread.

Before I bought Small Batch Baking I would whip up a cake mix, bake a few little cakes in my sandwich machine and store the rest of the batter in the refrigerator. Unfortunately, much of the time, that extra batter didn't get used.

I don't do that anymore. Now, whenever I'm in the mood for cake, I reach for this book. I've made lemon pudding cake, angel food cake, moist apple cake, fudgy mocha layer cake and cranberry upside-down cake… just to name a few.

I bake the majority of these cakes in soup cans. It works like a charm! Debby goes to great lengths to explain the process. I guarantee it's probably easier than you think.

 There is no need to go out and buy fancy little pans, for these recipes. I basically use a standard muffin pan, a loaf pan, custard cups, a tart pan and a cookie sheet. I've also used a jumbo muffin pan when I made the deep dish fruit pie recipe.

Some of my favorite recipes include banana pecan bread pudding, cashew caramel cheesecake, cheese bacon biscuits, mini French bread, Parmesan popovers, peach cobbler and peanut butter cookies. Honestly, my list goes on and on.

If you bake for one or two, I highly recommend that you consider purchasing this cookbook. You'll never be hungry for sweets again!
