30-minute Chicken Noodle Soup

In the winter, especially when colds tend to become more frequent, all you usually want is homemade chicken noodle soup, but who nowadays has time for that? Rachael Ray shows how to make quick and easy chicken noodle soup in only 30 minutes.


  • 2 tablespoons (2 turns around the pan) extra-virgin olive oil
  • 2 medium carrots, peeled and chopped
  • 1 parsnip, peeled and chopped
  • 1 medium onion, chopped
  • 2 ribs celery, chopped
  • 2 bay leaves, fresh or dried
  • Salt and pepper
  • 6 cups good quality chicken stock
  • 1 pound (the average weight of 1 package) chicken breast tenders, diced
  • 1/2 pound wide egg noodles
  • A handful fresh parsley, chopped
  • A handful fresh dill, chopped

Stuffing is supposed to be nutty, savory and aromatic. What better ingredients to have to accomplish this than shiitake mushrooms and hazelnuts? This is definitely a stand out recipe from Chef Trevor Kunk, with added onions and cooked with sherry vinegar and honey.


  • 1 lb. sourdough bread (about 1/2 large loaf)
  • 1 Tbs. extra-virgin olive oil
  • 4 cups thinly sliced yellow onions (about 3 medium onions)
  • 2 tsp. kosher salt
  • 1 1/4 tsp. freshly ground pepper
  • 1/2 cup sherry vinegar
  • 1 1/2 tsp. honey
  • 1 1/4 lb. shiitake mushrooms, stemmed and quartered (about 8 cups)
  • 2 Tbs. vegetable oil
  • 1 stick plus 2 Tbs. unsalted butter, melted, plus butter for greasing baking dish
  • 1 1/2 cups warm chicken stock
  • 1/4 cup thinly sliced fresh sage
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup finely chopped fresh chives
  • 1/2 cup hazelnuts, toasted, skinned and coarsely chopped
